These homemade Protein Mini Quiches are one of our favourite recipes for busy weeks.

Made with eggs, bacon, fresh vegetables and cheese, they're a simple way to prepare nutritious meals ahead of time without compromising on flavour.

They're equally delicious served warm or cold, making them perfect for breakfast, lunch, afternoon snacks or packed lunches.

Best of all, they freeze beautifully, making it easy to keep a homemade, nourishing meal ready whenever you need it.


Ingredients

Filling

  • 8 large eggs
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 cup grated sweet potato
  • 1 cup grated cheese (Gruyère, vintage cheddar or extra-mature cheddar are our favourites)
  • 300g bacon, diced
  • 1 large brown onion, finely diced
  • 4–5 garlic cloves, crushed
  • Vegeta Vegetable Gourmet Stock, to taste (optional)
  • Onion powder, to taste
  • Garlic powder, to taste
  • Freshly cracked black pepper, to taste
  • 2 tablespoons sour cream or thickened cream

Pastry

  • Ready-made shortcrust pastry

Method

Step 1

Cook the diced bacon in a frying pan until lightly golden.

Add the onion and garlic, cooking until softened and fragrant.

Allow the mixture to cool slightly.


Step 2

In a large bowl, whisk the eggs.

Add the grated zucchini, carrot, sweet potato, grated cheese, cooked bacon mixture, sour cream, Vegeta Vegetable Gourmet Stock, onion powder, garlic powder and freshly cracked black pepper.

Mix until evenly combined.


Step 3

Lightly grease a 12-well muffin tin.

Using a round cookie cutter, cut circles from the shortcrust pastry slightly larger than each muffin well.

Gently press the pastry into each well.

Prick the base with a fork.

Blind bake for approximately 8–10 minutes, or until the pastry is lightly golden.


Step 4

Evenly spoon the filling into each pastry case.

Bake at 190°C fan-forced for approximately 20–25 minutes, or until golden and cooked through.

A skewer inserted into the centre should come out clean.

Allow to cool slightly before serving.
